drink: watermelon juice
The weather in Edmonton is hot (record-setting!) and sunny, and it finally feels like summer.
I survived the sweltering heat this weekend by mixing up a batch of watermelon juice. It’s the perfect thirst quencher, is a great way to use up overripe watermelon, and is super easy to make.
In a food processor or blender, puree three cups of chilled cubed seedless watermelon and 1 tbsp. or so of lemon juice. Serve garnished with a piece of watermelon.
For a more bubbly beverage, fill your glass halfway with watermelon juice and then top up with sparkling water or prosecco.
Easy peasy and so refreshing!

It's so hot out here in Manitoba...I could definitely go for one of these right about now ;)
ReplyDeleteYou, too? It must be a cross-country heat wave.
DeleteHope you're keeping cool, lady!
Mmm! Yummy!
ReplyDeleteIt was very yummy, Kat! I made it when Gord was helping Scott with our fence. Gord said watermelons were not his thing. I should have sent some home for you to enjoy instead. (:
DeleteSure wish I had some watermelon right about now.
ReplyDeleteLooks delish, right?!
DeleteThis looks so good....I'll have to make this very soon!
ReplyDeleteIt was SO good, Natasha! I'm shaking my head wondering why I hadn't thought of it before.
DeleteWow, this looks so refreshing! I've been enjoying watermelon tea (hot & cold) from David's Tea.
ReplyDeleteHi Wendy! I didn't even know David's sold a watermelon tea - will have to check it out on my next trip to the mall.
